Wheat beer is a very popular summertime beverage around the world. Wheat beers are generally low to medium bodied, low hop bitterness and flavor and low alcohol, usually 3.5 to 4.2 percent. Germany produces a distinctive style of wheat beer called weizen. It has a characteristic phenolic spicy aroma and flavor often associated with clove and banana or bubble gum which is produced by the weizen yeast. American wheat beers have a clean crisp flavor profile lacking any of the phenolic characteristic of German Weizen. What is most interesting is that the same recipe will produce either style of beer by just changing the yeast.
