In 1864 August Herbolsheimer from Bavaria opened a brewery in Topeka KS. By the 1880's it was the largest brewery in Topeka producing some 2,000 barrels of beer. In 1882 the brewery was renamed the Topeka Steam Brewery. It is not known whether the name change was due to the fact that steam engines were used in the production of his beer or that one of the breweries notable brews was a “steam” beer. It was a bottom fermented, dark foamy brew that was fermented in the stone caverns beneath the brewhouse and living quarters.

The Topeka Steam contains:

  • Malt extract
  • Milled specialty grain
  • Hops
  • Priming sugar
  • Fining agents
  • Omega Lutra Kviek Yeast or California Common Yeast (Stock varies, Imperial, Omega, or Wyeast Laboratories)
