This highly flocculent strain produces bright, crystal-clear beers with a light, drinkable body and depth of flavor. Whether crafting a classic rice lager or experimenting with modern twists, L55 Kanpai delivers the refined drinkability that defines this globally loved style. L55 shows a higher sensitivity to pitch rate, fermentation temperature and dissolved oxygen. For best results, we recommend a pitch rate of 1.5 million cells/mL/ºP, a fermentation temperature between 54-58ºF and a dissolved oxygen level of 12-14ppm.
